It’s the new year and what does that
mean? Pretty much everyone is hitting
the gym, resolving to eat healthier, and trying to shed some of that unwanted
holiday weight gain.
Now you can dust off the old Jane Fonda or
Jazzercise videos and work out all you want, but if you’re not eating healthy,
then that’s a problem! So that’s why
today instead of a posting a normal indulgent dessert, I'm bringing you an
amazing recipe for protein bites, which are not only yummy but are packed with
superfoods to give you energy.
Here’s
what you need:
4 cups Bob’s Red Mill Gluten-Free Oats
1
Cup Natural Peanut Butter
1
cup Coconut Milk
1/3
whole chia Seeds
1/2
Cup Shredded coconut, unsweetened
3
tsp Vanilla extract
3
tbsp Honey
In a large mixing bowl, combine all ingredients.
Mix thoroughly, making sure everything is well combined. then you can either press the mixture into a
9x11 pan or into a Wilton bite-sized brownie silicone mold. I used the mold to make mine and it worked
amazingly well!
Whichever container you choose, after you
spread the protein mix into it, you'll need to refrigerate it for several hours
or until the mixture is nice and firm. Then either cut your bites out of the 9x11 pan
or pop them out of the mold. store them
in an air tight container in the fridge.
Each delicious little bite of this recipe should contain an average of about
three grams of protein. not bad for a
bite-sized treat!
